Why grams beat cups

A cup measures volume, but recipes depend on weight. A cup of flour can vary by 30 grams depending on whether you scoop or spoon it, which is enough to change the texture of bread or cake. Weighing ingredients removes the guesswork.

How the numbers on these pages were checked

Each ingredient weight is the average of two independent sources, and an ingredient is only listed when the two agree within 6 percent. All values are for a US cup of 236.6 ml and are approximate, since real ingredients vary by brand, humidity and packing.
